I love being able to come home from work or the gym and to be able to whip-up something quickly to eat for dinner. Sometimes I’m not in the mood for soup or salad and don’t have the time to marinate vegetables.

The most convenient item I have found to keep in my pantry for these nights are nori seaweed sheets. They come sold in a resealable packet of 50, and are extremely handy to have available to make a substantial but quick meal. The best bit about rolling nori, is that just about anything can go inside, so whatever I happen to have on-hand can get rolled up and then noshed.

You don’t even need to have any special equipment like a sushi mat to make these perfectly- I just use a cutting board and roll away, to make these perfect raw rolls of goodness. These are also good to bring along to a party as a raw snack to add to the food table, and are the perfect entree for a dinner party with friends.

Nori Noshes

Ingredients

4-5 nori sheets

1-2 Avocado, mashed with some salt and lime

Sprouts, chive or soybean work well

1 Carrot, grated

1-2 Tomato, sliced thinly

I can only find roasted seaweed sheets in Jakarta, but raw versions do exist and are available in other places around the world.

You can add just about any salad type ingredient- fresh c

orn, grated beet, salad leaves, shredded cabbage, baby spinach, sliced mushrooms, thinly sliced cucumber- use whatever you have handy and would like to eat

Preparation

  • Lay the nori sheet on the cutting board or plate, rough side up.
  • Smear a thin layer of the avocado mixture in a line down 1/4 of the width of the sheet, leaving a small section at the very end edge of the sheet.
  • Layer the other ingredients on top of the avocado.
  • Once you have added all the filling, roll the nori sheet, starting by gently folding the edge over the layer of filling, rolling in the direction away from you. When you have made a tube, you can brush a light layer of coconut oil over the edge of the sheet to help it to stick.
  • Continue this process with 3-4 more of the seaweed sheets.
  • Once you have used up all the prepared filling, cut the rolls in half and enjoy! Best eaten right away before they go a little soggy 🙂
