Quick Cauliflower and Avocado Soup {Raw}

This seriously took me under ten minutes to prepare from the time I opened my fridge and took out the cauliflower and avocado, to the time I was pouring the lusciously textured, creamy soup into a bowl to eat.

One of the best bits about eating raw is feeling like there is freedom to experiment. I’d never have thought of blending a cauliflower to eat in a soup before I started eating raw, but it totally works, and this particular soup creation is really satisfying.

I used coconut water and coconut flesh leftover from the previous day’s coconut soup dish, and it isn’t an essential item. This soup would still taste great without it- just add a bit more filtered water. The result of this recipe is a sweet, textured, filling, and satisfying soup in which you will taste the nuttiness of the cashews, the creaminess from the avocado, the sweetness of the coconut and texture from the cauliflower.

Quick Cauliflower and Avocado Soup

Ingredients

One head medium sized cauliflower, chopped into florets
One medium avocado, pit removed
1 cup coconut water and flesh
1/4 cup dry cashews
1 Tblsp Braggs Amino
1/2 cup water

Preparation

  • It is oh, so simple! Add all the ingredients to the blender, then blend until smooth.
  • Serve into bowls, sprinkle with paprika.

Serves 2
