Quinoa Fiesta {Vegan}

Quinoa Fiesta My love of the grain quinoa is pretty well-known, and at least once a week I whip together this delicious meal which takes less than 30 minutes to prepare and is packed full of nutrition. This dish really is a fiesta of taste and colour.

I vary this recipe a little each time I make it, depending on what fresh produce I have. I encourage you to use this recipe as a base and to experiment with different combinations. It would be difficult to stuff up!

Ingredients

1 cup quinoa, rinsed well
1/2 cup vegetable stock
1 cup sliced mushrooms
3 spring onions, sliced
1 red bell pepper, shopped
1 cup fresh or frozen sweet corn
juice from one lemon
1 can of navy beans, drained and rinsed
1/8 cup almond, chopped roughly
finely chopped fresh parsley to garnish

Directions

  • Cook the quinoa by boiling two cups of water in a saucepan, then adding the quinoa. Let it simmer for 12-15 minutes until the water has all evaporated.
  • Meanwhile, heat the veg stock in a medium fry pan. Add the mushrooms and saute them for a few minutes.
  • Add the spring onion, bell pepper and corn and saute for a further 5 minutes.
  • Add the lemon juice, beans and cooked quinoa and combine all the ingredients thoroughly.
  • Season with salt and pepper to taste. Garnish with the almonds and parsley. Serve immediately and savour!

Serves 2 main meals
