My raw preparation mantra is simplicity. I want to use easy to find ingredients that are possible to use in a variety of ways, and which don’t cost a fortune or take ages to prepare. This soup would have to be the most simple I can think of, and it is easy to adapt the ingredients depending on what you have (or don’t have) on-hand. For example, you could make the same soup without the avocado, and it still tastes great- it just won’t be as creamy. I had fresh dill which I wanted to use-up so I threw that in, but it could easily be omitted or replaced with fresh basil or chives. Don’t be afraid to experiment and try new combinations when preparing your meals.

Super Simple Soup

Ingredients

1 avocado, chopped (optional, omit for a non creamy soup)
3 carrots, peeled and roughly chopped
3 tomatoes, roughly chopped
2 stalks of celery, chopped
1 small onion, chopped
2 cloves garlic, minced
1/4 cup olive or coconut oil
1-2 cups of water (depends on the consistency you like)
bunch dill, chopped (basil would also taste nice)
salt to taste

Preparation

  • It doesn’t get simpler! Just put all the ingredients except the fresh herbs and salt into the blender.
  • Puree the mixture until it is smooth, then stir through the herbs and sprinkle with salt to taste after pouring into bowls.

Serves 2-3
