I first met the beautiful Maureen when she was a participant in one of my Uncooking classes last year. She was seeking a new, healthy lifestyle to overcome her health problems and she knew that learning about raw foods was definitely going to be one way that would help. When I learned that Maureen is also a blogger, I went and checked out her blog and have loved seeing her explore healthy living as she also begins to heal her body. Maureen is the perfect example of how it IS possible to make changes to your life to live healthier and happier. Maureen is the epitome of what I refer to as a Wellness Seeker, and I am so happy to be able to share her interview this week as part of Wellness Seeker Wednesday.
What made you decide to start following a healthy lifestyle?
At first it was because I saw how bad diabetes has run in my family (both my parents are diabetics) and because I wanted to lose weight. Then it take a more serious commitment after I found out I had a 9cm uterine fibroid. I refused surgery and chose the longer ‘fix’ which is eating mostly raw food and removing all processed foods from my diet.
What do you love most about changing your lifestyle/living this new way of life?
The energy! I feel so much more alive, much more happier as a person too. I am still trying to figure out what works and what’s not for me. For example I tried to avoid too much fruits now as I learned that the fructose didn’t respond too good for me. I love learning about this, understanding my own body and my own needs.
What is the question that you get asked the most about your new diet choices?
“Where is your protein from?” I still eat fish but have quit chicken and meat as well as dairy (but still eat the occasional egg) yet most people still believe I need milk and meat. This usually ends up in them finding out how much protein vegetables also really contain.
What are you most proud of, and why?
When my son reached for packaged food and read the label out loud. I understand he is young and he will have moments where he will be tempted to eat not so healthy but at least by educating him early on about the importance of eating healthy unprocessed food I feel like I am preparing him to make better options in his future.
What piece of advice do you have for people who are starting to eat healthier?
Start small. Make gradual changes by eliminating anything white from your diet (white rice, white sugar, white flour). Replace processed food with organic vegetables and fruits.
Smoothies or juice?
At the moment, juice with very small/almost no fruit as I feel like my body is far more sensitive to fructose than other people.
What has been your biggest challenge in living healthier?
Biggest one would be from my own self. Sometimes especially when it was that time of the month, I would still crave chocolates or ice cream. I would still have some dark chocolate but I try hard to limit what I can have to avoid eating the whole bar.
What is your favourite recipe?
Your zucchini pasta from the Uncooking Class! That’s my favorite go-to meal. So easy to make and so healthy.
What do you do to relax?
Writing, reading, yoga, guided meditations.
What are your health and wellness goals for the next 12 months?
That would be to focus on my fitness again and to completely be uterine fibroid free. I can feel them getting smaller and it has given me less and less problems (P.S. this might be too graphic but I used to have heavy bleeding every month that could last for a week and left me feeling so sick but not anymore) so that’s a good sign that I am on the right track.
